Wait, so are you planting more coriander because it is more likely to run and therefore produce less leafy growth due to the climate/lack of alien intervention.. or putting more in the spring rolls to enjoy now while it can still be grown? Or something else?

Given the warm temps and without tic tac intervention, the little 1m^2^ crop I have is bolting :( It's to enjoy it now when it's full of fluffy green foliage.

I've never seen it start to go into seed mid winter. Maybe it's a false spring?

Is it just overgrown? I've kept coriander plants growing for about 18 months by pinching off all the flowers and things but after a while it just wants to procreate and die

I'm guessing they are way too crowded. It's like a little rug this year. Will commence pinching tm methinks.
