You can't really apply the current needs (and partly wants) to an anarchist society. Yeah not everyone wants to be self employed but self employed in the current context is way different than it would be in anarchy. Obviously not everyone would want to go through the whole hassle of self employment (i.e marketing, dealing with taxes looking for jobs to do) and in anarchy you could have guilds or something where you could focus on just one thing you want to do without dealing with all of the other architectural stuff
