There is currently no "the phone" to buy. They all come with different quirks and down-sides.

Is there a list you could point me to? I guess im looking for the phone with the most stability.

The PostmarketOS list of supported devices, or alternatively the Ubuntu Touch supported devices list, but UT is not "normal" Linux.
