They don't prepare food on board. Everything served on a plane is premade and assembled, then loaded onboard just before the flight, so it takes up space they don't always have to bring food that there is no guarantee someone will want.
There are some big name airlines that do provide vegan options, so if this is something that matters to you, I recommend considering it when booking flights.
