Might as well redefine wage theft to "not paying me what I think I'm worth" if we're gonna go this far away from the typical definition.

I think it's usually along the lines of "not paying owed wages/paying below minimum wage", most places you can look it up. Aka. literally paying less than what's legal or agreed upon.
