Say for instance two or three instances have their own version of a sublemmy for some niche topic. Is it possible to group those sublemmys together so I can view posts from each federated instance as if they were all on one site?

Sure, over time things might normalize and one instances sublemmy will probably reign supreme, but for now is this possible?

You mean something like multireddits? Not sure if it's available right now, but it might change in the future.

Pretty much exactly like that, yes. I know implementation would probably be complex with the way (de)federation works but it'd be a nice QoL feature imo.

I just subscribe to communities on multiple instances, so I can see all posts on my home "subscribed" page

Yea I did the same, but personally I like to view a singular topic at a time so it would be nice to have like a "multi-lemmy". Looks like it's not here yet but its been requested on the github.

“Multicomms” is probably something many of the upcoming apps could implement, so you are able to watch content from multiple communities on the same page.
