Change of plans because I'm tired. I made zucchini slice so we're gonna eat that.

Tofu & vegetable stir-fry. I made the tofu this morning and am trying a new marinade for it, I'm a bit worried I overdid the soy sauce. Time will tell!

Edit: Dinner is made. Pretty yummy, the tofu worked really well.

Enchiladas!

Mix of black and navy beans, onion, capsicum, corn, tomatos and random mex spices. Bundled in burrito wraps with some jar sauce and cheese on top.

Chucked some tomato avo and parsley on top.

Made way too much so have a couple of serves of lunches too
